Description

This cozy apple crisp recipe is filled with tender baked apples and a buttery oat crumble that turns golden and crisp in the oven. With just the right amount of cinnamon and brown sugar, it’s an old-fashioned dessert that feels like a warm hug from the kitchen. Serve it warm with a scoop of ice cream — or two.

Ingredients

Units Scale

For the Topping:

  • 1/2 cup (70 g) all-purpose flour
  • 1/2 cup (50 g) old-fashioned oats
  • 1/2 cup (110 g) packed light brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/3 cup (76 g) unsalted butter, cold and diced

For the Apple Filling:

  • 2 pounds (900 g) apples (about 6 medium), peeled, cored, and sliced thin (about 1/8 inch)
  • Juice of 1/2 fresh lemon (to drizzle apples)
  • 3 tablespoons (42 g) unsalted butter, melted
  • 2 tablespoons (15 g) all-purpose flour
  • 3 tablespoons (45 ml) water
  • 1 tablespoon (15 ml) lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/4 cup (55 g) light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1 pinch salt

Instructions

  1. Preheat oven to 375°F (190°C) and butter an 8×8-inch (20×20 cm) baking dish.
  2. In a bowl, whisk flour, oats, brown sugar, baking powder, cinnamon, and salt. Add diced butter and rub with fingertips until crumbly. Chill while preparing the filling.
  3. In a small bowl, whisk melted butter and flour until smooth. Add water, lemon juice, vanilla, brown sugar, cinnamon, and salt. Mix well.
  4. Slice apples thinly, drizzle with juice from ½ lemon, and keep chilled to prevent browning. Pour the butter mixture over and toss gently to coat.
  5. Spread apples evenly into the prepared baking dish and sprinkle the chilled topping evenly over them.
  6. Bake for 35 minutes, until the top is golden brown and apples are tender.
  7. Let cool for 15 minutes before serving warm.

Notes

For this Apple Crisp Recipe, slice the apples thinly — about ⅛ inch — so they bake evenly and turn perfectly tender.

I like to mix tart and sweet apples — it keeps the flavor balanced and lively.

If the topping browns too quickly, just cover it loosely with foil for the last few minutes.

And yes, we actually did almost burn one batch because we were, as usual, chatting and laughing instead of setting a timer! Thankfully, we caught it just in time — between giggles.
