Description
A juicy boneless turkey breast roasted with citrus, fresh herbs, and a buttery crust. Perfect for small holiday dinners or any cozy meal. Serve it warm with cranberry sauce for a festive finish.
Ingredients
- 1 boneless turkey breast — frozen, then fully thawed
- 1 orange, sliced
- 1/2 lemon, sliced
- 1/2 onion (or 1 small), sliced
- 1 cup unsalted butter, softened
- 2 garlic cloves, minced
- 1 tbsp rosemary, finely chopped
- 1 tbsp thyme, finely chopped
- 1 tbsp sage, finely chopped
- Salt and pepper, to taste
Instructions
- Take the butter out of the fridge and let it come to room temperature. Add the minced garlic, chopped rosemary, thyme, sage, salt, and pepper, and mix until you have a soft, well-seasoned herb butter.
- Grease a casserole dish with a bit of the butter. Add the orange slices, lemon slices, and onion slices in an even layer on the bottom of the dish.
- Place the fully thawed boneless turkey breast on top of the citrus and onions. Spread the remaining herb butter all over the turkey, coating it generously on every side.
- Preheat the oven to 200°C / 375°F. Cover the dish with aluminum foil and bake for about 50 minutes.
- Remove the foil and continue roasting until the turkey is golden and crisp on the outside. You can use a meat thermometer here — when the center of the breast reaches 165°F / 73°C, it’s ready.
- Take the turkey out of the oven and let it rest for about 10 minutes. Slice, drizzle with cranberry sauce, and serve.
Notes
Softened butter sticks better and melts slower, helping the turkey brown beautifully.
If your turkey breast comes with netting, keep it on during roasting to help maintain its shape.
A splash of white wine in the pan adds extra depth to the sauce.
For a stronger citrus aroma, tuck a few extra slices under the turkey.
Spoon some of the pan juices over the turkey before the final 10 minutes for deeper color and richer flavor.
