Instructions

  1. Slice oranges into thin, even rounds. Boil sliced oranges in water for 10 minutes; drain on a rack.
  2. In a pan, combine sugar, water, and vanilla. Heat until dissolved. Add orange slices, bring to a gentle boil, then reduce to a simmer. Cook for 45 minutes, stirring occasionally.
  3. Transfer slices to a rack to dry for 4 hours.
  4. Coat with sugar if desired. Allow slices to dry for 24 hours before storing.
