  • 400 g requeijão (Catupiry-style is perfect)
  • 2 tablespoons Dijon mustard
  • 1/2 cup chopped parsley
  • Red pepper flakes to taste
  • Green onions, to finish

Instructions

  1. Chop the chicken into bite-sized pieces (about 2×2 inches—no ruler needed, just eyeball it).
  2. Sear it. Heat the oil in a large pan. Once it’s hot, toss in the chicken and let it get some color—about 4 minutes, give or take. Stir occasionally.
  3. Season like you mean it. Add salt, pepper, and red pepper flakes. Stir to coat.
  4. Add the juice + herbs. Pour in the passion fruit juice and parsley. Cover the pan and cook for 5 minutes, then uncover and stir frequently until the juice has evaporated.
  5. Bring in the mustard. Add the Dijon and stir well. Let it sizzle a little and start forming golden bits—that’s flavor magic.
  6. Time to get creamy. Lower the heat and stir in the requeijão. Mix until fully melted and coating the chicken.
  7. Taste and tweak. Adjust salt and pepper if needed, and finish with fresh green onions.

Notes

  • Requeijão tips: Brazilian brands like Catupiry or Tirolez work best. U.S. cream cheese will do in a pinch but won’t give the same creaminess.
  • The juice matters: Use concentrated passion fruit juice (not sweetened nectar). It should taste tart and bright. Maguary or Goya are great options.
  • Mustard is the bridge. It brings the passion fruit and cheese together—don’t skip it.
