Instructions
- Chop the chicken into bite-sized pieces (about 2×2 inches—no ruler needed, just eyeball it).
- Sear it. Heat the oil in a large pan. Once it’s hot, toss in the chicken and let it get some color—about 4 minutes, give or take. Stir occasionally.
- Season like you mean it. Add salt, pepper, and red pepper flakes. Stir to coat.
- Add the juice + herbs. Pour in the passion fruit juice and parsley. Cover the pan and cook for 5 minutes, then uncover and stir frequently until the juice has evaporated.
- Bring in the mustard. Add the Dijon and stir well. Let it sizzle a little and start forming golden bits—that’s flavor magic.
- Time to get creamy. Lower the heat and stir in the requeijão. Mix until fully melted and coating the chicken.

- Requeijão tips: Brazilian brands like Catupiry or Tirolez work best. U.S. cream cheese will do in a pinch but won’t give the same creaminess.
