  • 1/2 cup concentrated passion fruit juice
  • 1/2 cup fresh passion fruit pulp
  • 4 tablespoons unsalted butter
  • 1/2 cup sugar (granulated or brown works)
  • 4 tablespoons honey
  • 2 tablespoons extra virgin olive oil
  • 1 garlic clove, finely chopped
  • 1/2 lime, fresh squeezed juice (Optional)
  • Salt and freshly ground pepper, to taste

Instructions

  1. Pat the salmon fillets dry with a paper towel.
  2. Heat half the butter and olive oil in a non-stick skillet.
  3. Add the garlic and let it release its fragrance.
  4. Place the salmon in the pan and sear for about 3 minutes per side, including the edges. Remove and set aside.
  5. In the same pan, add the remaining butter and concentrated juice, letting it simmer gently.
  6. Stir in the honey and sugar until melted into a glossy sauce.
  7. Add the fresh passion fruit pulp.
  8. Return the salmon to the pan, spooning the sauce over each piece. Cook for about a minute on each side.
  9. Serve hot, drizzled generously with the tangy-sweet glaze.

Notes

Want extra caramelization? Sprinkle a touch more sugar while the sauce simmers. Taste first and keep the sweetness to your taste.
