Base:

  • 300 g gluten-free spaghetti (or regular, if preferred)

For the Sauce:

  • 1 1/2 large onions, thinly sliced
  • 1 garlic clove, minced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon sugar
  • 1/2 cup white wine
  • 1 cup vegetable broth
  • 1 cup heavy milk or almond cream
  • Salt and ground black pepper, to taste
  • 1/4 cup grated Parmesan cheese (plus a few thin slices for garnish)

Instructions

  1. Warm olive oil in a large skillet over medium-low heat. Add sugar and let it melt gently. Stir in onions, garlic, salt, and pepper. Cook slowly until golden and soft, about 10–15 minutes. Set aside a spoonful for garnish.
  2. Pour in white wine to deglaze the pan. Simmer 1–2 minutes, then add vegetable broth. Cook for another minute.
  3. Meanwhile, cook the spaghetti in salted water until al dente. Reserve about ½ cup of the cooking water.
  4. Stir Parmesan into the onions until melted. Add the heavy milk or almond cream and mix until smooth and creamy.
  5. Toss the cooked pasta and a bit of reserved pasta water into the sauce. Stir until coated. Serve topped with reserved onions and Parmesan shavings.

Notes

Take your time caramelizing — slow cooking brings out the sweetness.

Substitute the white wine with broth and lemon juice if you prefer.

Add mushrooms or spinach for extra depth.
